For the Zucchini Base
  • 2 medium zucchini Grated and excess moisture squeezed out
  • 1 large egg Room temperature
  • 1 cup mozzarella cheese Shredded
  • ¼ cup parmesan cheese Grated
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Toppings
  • 1 cup marinara sauce Store-bought or homemade
  • 1 cup mozzarella cheese Shredded
  • ½ cup pepperoni slices Optional
  • ¼ cup bell pepper Diced, optional
  • ¼ cup black olives Sliced, optional
  • ¼ cup fresh basil Chopped, for garnish

Prepare the Zucchini Base
  1. Preheat your oven to 425°F (220°C). This ensures that the zucchini base will cook properly and become crispy.
  2. Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to prevent a soggy pizza base.
  3. In a mixing bowl, combine the grated zucchini, egg, mozzarella cheese, parmesan cheese, garlic powder, dried oregano, salt, and black pepper. Mix until well combined.
  4. Line a baking sheet with parchment paper. Spread the zucchini mixture onto the parchment paper, forming a round pizza shape about ¼ inch thick. Use a spatula to smooth the surface.
  5. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center is firm. This step helps to create a sturdy base for your toppings.
Add Toppings and Bake
  1. Remove the zucchini base from the oven and spread marinara sauce evenly over the top, leaving a small border around the edges.
  2. Sprinkle shredded mozzarella cheese over the sauce, followed by your choice of toppings such as pepperoni, bell pepper, and olives.
  3. Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  4. Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil before slicing.
