How to Make Vanilla Bean St. Patrick’s Day Cookies
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together softened butter, granulated sugar, and brown sugar in a large bowl using a mixer.
- Add eggs one at a time into the butter-sugar mixture, then mix in the scraped vanilla bean seeds.
- Whisk together the flour and baking soda in a separate bowl, gradually add to the wet ingredients, stirring just until combined.
- Scoop spoonfuls of dough onto the prepared baking sheets, spacing them two inches apart, and sprinkle with green sprinkles.
