Prepare the Ingredients
- Wash and dry the salad greens thoroughly to remove any dirt or pesticides.
- Slice the red bell pepper, cucumber, and shred the carrot. Set aside.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until creamy, adding a pinch of salt if desired.
Make the Dressing (optional)
- In a small mixing bowl, combine olive oil, lemon juice, Dijon mustard, salt, and pepper. Whisk until well blended.
Assemble the Wraps
- Lay a tortilla flat on a clean surface. Spread 1 tablespoon of hummus evenly over the tortilla.
- Layer 2 oz of sliced turkey on top of the hummus.
- Add a generous amount of mixed greens, followed by the sliced bell pepper, shredded carrot, and cucumber.
- Finally, add a layer of mashed avocado on top of the veggies.
- Drizzle with the prepared dressing if using.
- Carefully roll the tortilla tightly from one end to the other, tucking in the sides as you go to secure the filling.
- Repeat the process for the remaining tortillas and ingredients.
Serve

These wraps can be made ahead of time and stored in the refrigerator for up to 2 days. To prevent the avocado from browning, consider adding a little lemon juice to the mashed avocado before spreading it on the wrap.
