Ingredients
  

For the Pasta
  • 8 oz short pasta choose fusilli or penne
For the Salad
  • 1 can (5 oz) chunk light tuna in water drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced, seedless preferred
  • ½ cup red onion thinly sliced
  • ¼ cup fresh parsley chopped
For the Dressing
  • ½ cup mayonnaise or Greek yogurt for a lighter option
  • 1 teaspoon Dijon mustard
  • 2 tablespoon lemon juice fresh
  • salt to taste
  • pepper to taste

Method
 

Cooking Instructions
  1. Boil the pasta in salted water according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the dressing by mixing together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  3. In a large mixing bowl, combine the cooled pasta with the drained tuna, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and chopped parsley.
  4. Pour the dressing over the pasta mixture and toss gently until well-coated.
  5. Cover the salad and chill it in the refrigerator for at least one hour before serving.
