  • 2 cups fresh strawberries hulled and sliced
  • 2 cups fresh rhubarb chopped into ½-inch pieces
  • 1 cup granulated sugar adjust based on sweetness preference
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon vanilla extract for flavor enhancement
  • 1 teaspoon lemon juice freshly squeezed
For the Topping
  • 2 cups all-purpose flour sifted
  • 1 tablespoon baking powder for leavening
  • ½ teaspoon salt
  • ¼ cup granulated sugar for sweetness
  • ½ cup unsalted butter cold and cubed
  • ¾ cup milk whole milk preferred
  • 1 teaspoon vanilla extract

Method
 

Prepare the Filling
  1. Preheat your oven to 375°F (190°C). This ensures that the cobbler will bake evenly.
  2. In a large mixing bowl, combine the sliced strawberries and chopped rhubarb.
  3. Add the granulated sugar, cornstarch, vanilla extract, and lemon juice. Stir gently until the fruit is well coated.
  4. Let the mixture sit for about 10 minutes to allow the juices to release, which will enhance the flavor.
  5. Transfer the fruit mixture into a greased 9x13-inch baking dish, spreading it evenly.
Make the Topping
  1. In a separate mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  3. Pour in the milk and vanilla extract, stirring gently until just combined. Be careful not to overmix, as this can make the topping tough.
Assemble and Bake
  1. Drop spoonfuls of the biscuit topping over the fruit filling, leaving some gaps for the fruit to peek through.
  2. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
  3. Remove from the oven and let cool for at least 10 minutes before serving. This allows the filling to set slightly.

Notes

For best results, use fresh strawberries and rhubarb. If using frozen fruit, reduce the sugar slightly as frozen fruit can be sweeter. This cobbler is best enjoyed fresh but can be stored in the refrigerator for up to 3 days.
