Noodles
  • 8 oz Lo mein noodles Use fresh or dried noodles.
Shrimp
  • 1 lb Medium shrimp Peeled and deveined.
Vegetables
  • 1 cup Bell peppers Use a mix of colors.
  • 1 cup Carrots Shredded.
  • 1 cup Broccoli florets
Sauce
  • 3 tablespoon Low-sodium soy sauce
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic Minced.

Cooking Steps
  1. Cook the noodles: Prepare the lo mein noodles according to the package instructions until al dente. Drain them and set aside.
  2. Stir-fry the veggies: In a large skillet or wok, heat a splash of vegetable oil over medium-high heat. Add the bell peppers, carrots, and broccoli, and stir-fry for about 3 minutes until tender-crisp.
  3. Add the shrimp: Push the sautéed veggies to one side of the pan and add the shrimp on the other side. Cook for about 3-5 minutes until they turn pink.
  4. Combine and toss: Add the cooked lo mein noodles back into the pan. Sprinkle in the minced garlic, soy sauce, and sesame oil. Toss everything together.
  5. Serve hot: Taste your dish and adjust seasoning if needed. Serve hot, optionally garnished with green onions or sesame seeds.
