How to Make Reverse Sear Prime Rib
  1. Prepare the Roast: Let your prime rib sit at room temperature for about an hour. Preheat your oven to 225°F (107°C) and have your seasoning ready.
  2. Season Generously: Rub the prime rib all over with kosher salt, freshly cracked black pepper, garlic powder, and finely chopped rosemary.
  3. Set Up for Roasting: Place the seasoned prime rib on a wire rack set inside a roasting pan. Roast until the internal temperature reaches 120°F (49°C), about 2-3 hours.
  4. Let Rest: Once the roast reaches the desired temperature, remove it from the oven. Let it rest for at least 20 minutes.
  5. Broil to Finish: Increase your oven temperature to high broil (500°F or 260°C). Brush the roast with olive oil and broil for about 10 minutes.
