Ingredients
  

For the Salad
  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cup bell peppers diced
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup red cabbage shredded
  • ½ cup red onion thinly sliced
  • ½ cup feta cheese crumbled
  • ¼ cup olives sliced
For the Dressing
  • 2 tablespoons olive oil extra virgin recommended
  • 1 tablespoon vinegar balsamic or red wine vinegar
  • salt to taste
  • pepper to taste

Method
 

Preparation
  1. Wash all vegetables thoroughly under cold running water.
  2. Chop the mixed greens, cherry tomatoes, bell peppers, cucumber, carrots, red cabbage, and red onion into bite-sized pieces.
  3. Combine the chopped greens and vegetables in a large bowl.
  4. Add feta cheese and olives to the bowl.
  5. Whisk together olive oil, vinegar, salt, and pepper in a small bowl.
  6. Pour the dressing over the salad and gently toss to combine.
  7. Serve immediately or chill in the fridge for 30 minutes.
