  • 1 cup Pumpkin puree Canned or homemade
  • 2 large Eggs Room temperature
  • 1 cup Milk Whole or any milk alternative
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Ground nutmeg
  • ¼ teaspoon Ground ginger
  • ¼ teaspoon Salt
  • 1 tablespoon Brown sugar Packed
For the French Toast
  • 8 slices Thick bread Challah or brioche recommended
  • 2 tablespoon Butter For frying
  • Maple syrup to taste For serving

Method
 

Prepare the Pumpkin Mixture
  1. In a mixing bowl, combine the pumpkin puree, eggs, milk, vanilla extract, cinnamon, nutmeg, ginger, salt, and brown sugar. Whisk together until smooth and well combined. This mixture will coat the bread and infuse it with pumpkin flavor.
Prepare the Bread
  1. Heat a frying pan over medium heat and add 1 tablespoon of butter. Allow the butter to melt and bubble, but not brown.
  2. While the pan is heating, dip each slice of bread into the pumpkin mixture, ensuring both sides are coated well. Let any excess mixture drip off before placing it in the pan.
Cook the French Toast
  1. Place the coated bread slices in the hot pan, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side, or until golden brown and cooked through. Adjust the heat as necessary to prevent burning.
  2. Once cooked, transfer the French toast to a plate and keep warm while you repeat the process with the remaining slices, adding more butter to the pan as needed.
Serve
