- Preheat the oven to 375°F (190°C).
- Roll out the pie crust and cut it into circles to fit the muffin tins.
- Whisk together the eggs and milk in a bowl, adding salt and pepper to taste.
- Sprinkle cheese and add bell peppers and bacon or ham into each crust. Pour the egg mixture over the fillings.
- Bake for 20-25 minutes until tops are golden brown.
- Cool slightly before removing from the tin and serve warm.
