Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to even thickness
  • 1 teaspoon salt divided
  • 1 teaspoon black pepper divided
  • 2 tablespoons olive oil for cooking
For the Sauce
  • 3 cloves garlic minced
  • 1 cup chicken broth low sodium recommended
  • 1 cup heavy cream room temperature
  • 1 cup parmesan cheese grated
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon red pepper flakes optional, for heat
For the Pasta
  • 12 ounces fettuccine or pasta of choice cooked according to package instructions
For Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Chicken
  1. Pound the chicken breasts to an even thickness using a meat mallet. This ensures even cooking and tenderness.
  2. Season both sides of the chicken breasts with salt and black pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).
  4. Remove the chicken from the skillet and set aside on a plate.
Make the Sauce
  1. In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.
  2. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. This adds flavor to the sauce.
  3. Stir in the heavy cream, parmesan cheese, thyme, basil, and red pepper flakes (if using). Allow the sauce to simmer for 3-5 minutes until it thickens slightly.
Combine Chicken and Pasta
  1. Return the cooked chicken to the skillet, spooning some sauce over the top. Let it simmer for an additional 2-3 minutes to heat through.
  2. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  3. Toss the cooked pasta with the remaining sauce in the skillet, ensuring it is well coated.
Serve
  1. Plate the pasta and top with the chicken. Garnish with chopped parsley for a fresh finish.
