  • 1 lb Boneless, Skinless Chicken Breasts
  • 2 cloves Garlic, minced
  • 2 tablespoon Dijon Mustard
  • 2 tablespoon Pure Maple Syrup Choose high-quality syrup
  • 2 tablespoon Low-Sodium Soy Sauce
For the Sweet Potatoes
  • 2 large Sweet Potatoes Cubed
  • 2 tablespoon Olive Oil
  • to taste Salt

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by peeling and cubing them into bite-sized pieces. Toss the cubes with olive oil and salt, then spread them evenly on a parchment-lined baking sheet.
  3. Mix the marinade by combining Dijon mustard, maple syrup, minced garlic, and soy sauce in a bowl. Coat the chicken breasts and let them marinate.
  4. Roast sweet potatoes in the oven for 25-30 minutes or until golden brown and fork-tender. Toss halfway through.
  5. Cook the marinated chicken in a skillet over medium heat with olive oil for about 6-7 minutes per side or until cooked through.
  6. Serve by plating the roasted sweet potatoes and sliced chicken together. Drizzle with any remaining sauce.
