  • 1 large ripe mango peeled, pitted, and diced
  • 1 can black beans 15 oz, rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 small red onion finely diced
  • 1 cup corn fresh or frozen, thawed
  • ¼ cup fresh cilantro chopped
For the Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon honey or agave syrup for vegan option
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt to taste
  • ¼ teaspoon black pepper freshly ground

Method
 

Prepare the Salad Ingredients
  1. In a large mixing bowl, combine the diced mango, rinsed black beans, halved cherry tomatoes, diced cucumber, finely diced red onion, corn, and chopped cilantro. Gently toss the ingredients together to mix evenly.
  2. Make sure the mango is ripe for the best sweetness and flavor. If using frozen corn, ensure it is fully thawed before adding.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lime juice, honey, ground cumin, salt, and black pepper until well combined. This will create a smooth dressing that enhances the salad's flavors.
  2. Taste the dressing and adjust the salt or lime juice according to your preference.
Combine and Serve
  1. Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly. Allow the salad to sit for about 5 minutes before serving to let the flavors meld.
