  • 8 slices thick-cut bacon
For the Filling
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 2 pieces fresh jalapeños diced with seeds removed
  • 1 teaspoon garlic powder
For Serving
  • ½ cup sour cream

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Create pockets in each chicken breast by carefully slicing horizontally without cutting all the way through.
  3. Mix together the cream cheese, cheddar cheese, diced jalapeños, and garlic powder in a bowl until well combined.
  4. Stuff each chicken pocket generously with the filling, and wrap each breast with slices of bacon.
  5. Arrange the stuffed chicken in the baking dish and bake for 30-35 minutes until the bacon is crispy and the internal temperature reaches 165°F (75°C).
  6. Let rest for a few minutes before serving with sour cream on top.
