For the Jalapeno Sauce
  • 2 tablespoon butter for sautéing
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 2 medium jalapenos seeded and finely diced
  • 1 cup heavy cream for a rich sauce
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon cumin for flavor
  • ½ teaspoon smoked paprika for depth of flavor
  • ¼ cup fresh cilantro chopped, for garnish

Method
 

Prepare the Chicken
  1. Heat olive oil in a large skillet over medium-high heat. This will help to sear the chicken and lock in moisture.
  2. Season the chicken pieces with salt and black pepper. This enhances the flavor of the chicken.
  3. Add the chicken to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F/75°C).
  4. Remove the chicken from the skillet and set aside. This prevents overcooking and allows the chicken to rest.
Make the Jalapeno Sauce
  1. In the same skillet, melt the butter over medium heat. This will add richness to the sauce.
  2. Add the chopped onion and sauté for about 3-4 minutes until translucent. This step builds the base flavor.
  3. Stir in the minced garlic and diced jalapenos, cooking for another 2-3 minutes until fragrant. Adjust the amount of jalapenos based on your heat preference.
  4. Pour in the heavy cream and stir well to combine. Allow it to simmer for about 5 minutes, until slightly thickened.
  5. Add lime juice, cumin, and smoked paprika to the sauce, stirring to incorporate. This adds a zesty and smoky flavor.
Combine and Serve
  1. Return the cooked chicken to the skillet, stirring to coat in the sauce. Cook for an additional 2-3 minutes to heat through.
  2. Taste and adjust seasoning if necessary. This ensures the dish is perfectly seasoned.
  3. Garnish with chopped cilantro before serving. This adds a fresh touch and enhances presentation.
  4. Serve hot over rice, pasta, or with tortillas. This makes for a complete meal.

Notes

For a milder version, remove the seeds from the jalapenos and use less. Serve with lime wedges for an extra zing.
