  • 1 cup bell peppers a mix of red, yellow, and green
  • 1 cup zucchini
  • 1 cup cremini or button mushrooms
  • 2 cloves garlic minced
For the Cooking
  • 2 tablespoons soy sauce
  • 1 tablespoon extra virgin olive oil

Cooking Instructions
  1. Wash and prep all vegetables by rinsing them under cold water. Chop the bell peppers into bite-sized pieces, slice the zucchini, and thinly slice the mushrooms.
  2. Heat oil in a large skillet over medium heat. Pour in the extra virgin olive oil.
  3. Add garlic to the hot pan and sauté for about 30 seconds.
  4. Toss in the veggies: Add the bell peppers, zucchini, and mushrooms. Cook for about 5 minutes until softened but still slightly crunchy.
  5. Drizzle soy sauce over the sautéed veggies. Cook for an additional 2 minutes.
  6. Serve hot, optionally sprinkle sesame seeds on top.
