Ingredients

Dry Ingredients
  • 1 ½ cups whole wheat flour sifted
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon ground
  • ¼ teaspoon salt
Wet Ingredients
  • ½ cup unsweetened applesauce acts as a natural sweetener
  • ¼ cup honey or maple syrup for vegan option
  • 1 large egg room temperature
  • ½ cup milk dairy or non-dairy
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup apples peeled, cored, and diced
  • ½ cup walnuts chopped, optional

Method

Prepare the Oven and Muffin Tin
  1. Preheat your oven to 350°F (175°C). This ensures that the muffins bake evenly and rise properly.
  2. Grease a muffin tin with cooking spray or line it with muffin liners to prevent sticking.
Mix Dry Ingredients
  1. In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt. This helps to evenly distribute the leavening agents and spices.
Combine Wet Ingredients
  1. In another bowl, mix the applesauce, honey, egg, milk, and vanilla extract until well combined. This mixture adds moisture and sweetness to the muffins.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix, as this can lead to dense muffins.
Add Apples and Walnuts
  1. Fold in the diced apples and walnuts (if using) until evenly distributed throughout the batter.
Bake the Muffins
  1. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full. This allows room for the muffins to rise.
  2. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. This indicates that the muffins are fully cooked.
Cool and Serve
  1. Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a cooling rack. This prevents them from becoming soggy.
  2. Enjoy warm or at room temperature. These muffins can be stored in an airtight container for up to 3 days.
