Ingredients
  

For the Chicken
  • 1.5 pounds boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder for extra flavor
For the Sauce
  • 4 cloves garlic minced
  • 1 cup chicken broth low sodium preferred
  • 1 cup heavy cream for creaminess
  • 1 cup grated Parmesan cheese plus more for serving
  • 1 teaspoon Italian seasoning for added flavor
  • 1 teaspoon red pepper flakes optional, for heat
For the Pasta
  • 12 ounces penne pasta or pasta of choice
  • 2 cups fresh spinach optional, for added nutrition

Method
 

Prepare the Chicken
  1. In a large bowl, season the chicken pieces with salt, black pepper, and garlic powder. This will enhance the flavor of the chicken.
  2. Place the seasoned chicken in the crockpot.
Make the Sauce
  1. In a separate bowl, combine minced garlic, chicken broth, heavy cream, grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir well to combine.
  2. Pour the sauce mixture over the chicken in the crockpot, ensuring all pieces are coated.
Cook the Dish
  1. Cover the crockpot and cook on low for 4 hours or on high for 2 hours. This slow cooking allows the flavors to meld and the chicken to become tender.
Cook the Pasta
  1. About 30 minutes before serving, cook the penne pasta according to package instructions until al dente. Drain and set aside.
Combine and Serve
  1. Once the chicken is cooked, stir in the cooked pasta and fresh spinach into the crockpot. The residual heat will wilt the spinach.
  2. Serve immediately, garnished with additional Parmesan cheese and fresh herbs if desired.
