  • 1 cup orzo pasta
For the Aromatics
  • 2 medium yellow onions
  • 2 cloves fresh garlic

  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon Dijon mustard

Method
 

Preparation Instructions
  1. Preheat your oven to 375°F (190°C) and coat a baking dish with nonstick spray.
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet, melt butter and sauté the onions until caramelized, about 15-20 minutes. Add garlic during the last few minutes.
  4. Mix soy sauce and Dijon mustard with the caramelized onions and garlic.
  5. Layer the onion-garlic mix in the baking dish, followed by orzo, chicken broth, and chicken on top.
  6. Cover with foil and bake for 30-35 minutes until chicken is cooked through and orzo is tender.
  7. If desired, add cheese on top and let sit for 5 minutes before serving.
