Method
 

  1. Preheat your oven to 375°F (190°C) and coat a baking dish with nonstick spray.
  2. Season the chicken breasts generously with salt and pepper.
  3. In a skillet, melt butter over medium heat and sauté the sliced onions until caramelized, about 15-20 minutes. Add minced garlic during the last few minutes.
  4. Stir together soy sauce and Dijon mustard with the sautéed onion mixture.
  5. Layer the onion-garlic mix, orzo, chicken on top, and pour in broth in the prepared baking dish.
  6. Cover with foil and bake for 30-35 minutes until chicken reaches 165°F (75°C) and orzo is tender.
  7. Optional: Remove from oven and sprinkle cheese on top. Let sit for 5 minutes before serving.
