Ingredients

For the Sauce Base
  • 2 tablespoons olive oil for sautéing
  • 1 large onion finely chopped
  • 4 cloves garlic minced
  • 1 medium carrot finely diced
  • 1 medium celery stalk finely diced
For the Tomato Base
  • 2 cans crushed tomatoes 28 oz each
  • 1 can tomato paste 6 oz
  • 1 can diced tomatoes 14.5 oz, undrained
For the Seasoning
  • 1 tablespoon dried oregano or 2 tablespoons fresh
  • 1 tablespoon dried basil or 2 tablespoons fresh
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground
  • ½ teaspoon red pepper flakes optional, for heat
For the Protein (optional)
  • 1 pound ground beef or Italian sausage, browned and drained

Method

Prepare the Vegetables
  1. Heat olive oil in a skillet over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until softened and the onion is translucent.
  2. Add minced garlic and sauté for an additional 1-2 minutes until fragrant. This step enhances the flavors of the sauce.
Combine Ingredients in the Crockpot
  1. Transfer the sautéed vegetables to the crockpot.
  2. Add the crushed tomatoes, tomato paste, and diced tomatoes. Stir well to combine.
  3. If using, add the browned ground beef or sausage at this stage.
Season the Sauce
  1. Sprinkle in the oregano, basil, sugar, salt, black pepper, and red pepper flakes. Stir to incorporate all the seasonings evenly.
Cook the Sauce
  1. Cover the crockpot and set it to low heat. Allow the sauce to cook for 6-8 hours. The long cooking time allows the flavors to meld beautifully.
  2. Stir occasionally if possible, to ensure even cooking.
Final Touches
  1. Taste the sauce before serving and adjust seasoning if necessary. You can add more salt, sugar, or herbs according to your preference.
  2. Serve over cooked spaghetti or your favorite pasta.
