Ingredients

For the Chicken
  • 2 pounds boneless, skinless chicken breasts trimmed of excess fat
For the BBQ Sauce
  • 1 cup BBQ sauce use your favorite brand or homemade
  • 1 tablespoon apple cider vinegar adds tanginess
  • 1 tablespoon honey for sweetness
  • 1 teaspoon smoked paprika for a smoky flavor
  • 1 teaspoon garlic powder for depth of flavor
  • 1 teaspoon onion powder for sweetness
  • ½ teaspoon black pepper freshly ground for best flavor
  • ½ teaspoon salt to taste

Method

Prepare the Chicken
  1. Trim any excess fat from the chicken breasts to ensure a leaner dish and prevent greasy sauce.
  2. Place the chicken breasts in the bottom of the crockpot in a single layer.
Make the BBQ Sauce
  1. In a mixing bowl, combine the BBQ sauce, apple cider vinegar, honey, smoked paprika, garlic powder, onion powder, black pepper, and salt. Whisk together until smooth.
  2. Taste the sauce and adjust seasoning if necessary, adding more honey for sweetness or vinegar for tang.
Cook the Chicken
  1. Pour the BBQ sauce mixture evenly over the chicken in the crockpot, ensuring all pieces are coated.
  2. Cover the crockpot with the lid and set it to cook on low for 6-8 hours or on high for 3-4 hours. Cooking on low allows the flavors to meld and the chicken to become tender.
Shred and Serve
  1. Once cooked, use tongs to remove the chicken from the crockpot and place it on a cutting board.
  2. Shred the chicken using two forks, pulling apart the meat into bite-sized pieces.
  3. Return the shredded chicken to the crockpot and stir it into the remaining sauce to coat.
  4. Serve the BBQ chicken on buns, over rice, or with your favorite sides.
