Prepare the Potatoes

  3. In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and black pepper. Whisk together until well combined.
  4. Add the potato wedges to the bowl and toss them in the lemon mixture until they are evenly coated. This step infuses the potatoes with flavor.
Roast the Potatoes
  1. Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Spread the coated potato wedges in a single layer on the baking sheet. Make sure they are not overcrowded, as this will help them crisp up.
