How to Make Cheesy Chicken and Rice
- Preheat your oven to 400°F (200°C) and prepare your baking dish with a light spray of nonstick cooking spray.
- Season the chicken breasts with salt and pepper. In a large skillet over medium heat, add a bit of oil and sauté the chicken until golden brown, about 5 minutes on each side.
- Whisk together the soy sauce, chicken broth, and minced garlic in a bowl.
- Layer the cooked rice in the bottom of your baking dish, then place the browned chicken right on top. Pour the savory sauce over everything.
- Cover the dish with foil and bake for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (74°C). Remove the foil, sprinkle the cheeses on top, and bake uncovered for an additional 5 minutes.
- Garnish with chopped green onions before serving.
