How to Make Cheesy Chicken and Rice
  1. Preheat your oven to 400°F (200°C) and prepare your baking dish with a light spray of nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper. In a large skillet over medium heat, add a bit of oil and sauté the chicken until golden brown, about 5 minutes on each side.
  3. Whisk together the soy sauce, chicken broth, and minced garlic in a bowl.
  4. Layer the cooked rice in the bottom of your baking dish, then place the browned chicken right on top. Pour the savory sauce over everything.
  5. Cover the dish with foil and bake for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (74°C). Remove the foil, sprinkle the cheeses on top, and bake uncovered for an additional 5 minutes.
  6. Garnish with chopped green onions before serving.
