Ingredients
  

For the BBQ Chicken
  • 1 pound boneless, skinless chicken breasts trimmed of excess fat
  • 1 cup BBQ sauce your favorite brand
  • 1 teaspoon smoked paprika for added flavor
  • 1 teaspoon garlic powder for seasoning
  • 1 teaspoon onion powder for seasoning
  • 1 tablespoon olive oil for grilling
For the Slaw
  • 2 cups shredded green cabbage freshly shredded
  • 1 cup shredded carrots freshly shredded
  • 1 tablespoon apple cider vinegar for tanginess
  • 1 tablespoon honey to balance flavors
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Avocado Sauce
  • 1 ripe avocado peeled and pitted
  • 1 tablespoon lime juice freshly squeezed
  • 1 clove garlic minced
  • 1 tablespoon water to thin the sauce
  • 1 pinch salt to taste
For Assembly
  • 8 small corn tortillas warmed
  • 1 cup fresh cilantro chopped, for garnish

Method
 

Prepare the BBQ Chicken
  1. Preheat your grill or grill pan over medium-high heat. This ensures a good sear on the chicken.
  2. In a mixing bowl, combine the BBQ sauce, smoked paprika, garlic powder, and onion powder. Mix well to create a marinade.
  3. Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 10 minutes to absorb the flavors.
  4. Drizzle olive oil on the grill or grill pan to prevent sticking. Place the marinated chicken on the grill.
  5. Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). This ensures the chicken is fully cooked.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing. This helps retain the juices.
Make the Slaw
  1. In a large mixing bowl, combine the shredded cabbage and carrots.
  2. In a small bowl, whisk together the apple cider vinegar, honey, salt, and pepper.
  3. Pour the dressing over the cabbage and carrots. Toss well to combine, ensuring the vegetables are evenly coated.
  4. Let the slaw sit for at least 5 minutes to allow the flavors to meld.
Prepare the Avocado Sauce
  1. In a mixing bowl, mash the avocado until smooth.
  2. Add lime juice, minced garlic, and a pinch of salt. Mix well.
  3. If the sauce is too thick, add water a tablespoon at a time until you reach your desired consistency.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side until pliable.
  2. Slice the grilled chicken into thin strips.
  3. To assemble, place a few strips of chicken on each tortilla, top with slaw, and drizzle with avocado sauce.
  4. Garnish with chopped cilantro for added freshness.
