- Cook the rice according to package instructions for a fluffy base.
- In a bowl, whisk mayonnaise, Sriracha, and honey until smooth.
- Heat olive oil in a skillet, add shrimp, and cook for 2-3 minutes per side until pink.
- Remove shrimp, stir-fry bell peppers and green onions for about 5 minutes.
- Return shrimp to skillet, drizzle half the sauce over and toss to coat.
- Serve rice in bowls topped with shrimp and veggies, drizzle with remaining sauce.
