Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour sifted
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
Wet Ingredients
  • 3 medium ripe bananas mashed
  • ½ cup granulated sugar
  • ¼ cup brown sugar packed
  • cup unsalted butter melted and slightly cooled
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup chocolate chips semi-sweet or dark

Method
 

Prepare the Oven and Muffin Tin
  1. Preheat your oven to 350°F (175°C). This ensures that the muffins bake evenly and rise properly.
  2. Grease a muffin tin or line it with muffin liners to prevent sticking.
Mix Dry Ingredients
  1. In a large mixing bowl, whisk together the flour, baking soda, baking powder, and salt. This helps to evenly distribute the leavening agents throughout the flour.
Mix Wet Ingredients
  1. In another bowl, mash the ripe bananas until smooth. You can use a fork or a potato masher.
  2. Add the granulated sugar, brown sugar, melted butter, eggs, and vanilla extract to the mashed bananas. Whisk until well combined and smooth.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients. Gently fold them together using a rubber spatula until just combined. Be careful not to overmix, as this can make the muffins tough.
Add Chocolate Chips
  1. Fold in the chocolate chips until evenly distributed throughout the batter.
Bake the Muffins
  1. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  2. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool and Serve
  1. Remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a cooling rack to cool completely.

Notes

For best results, use very ripe bananas as they are sweeter and more flavorful. You can also add nuts or dried fruit for extra texture.
