  • 4 fillets trout skin-on, approximately 6 ounces each
  • 2 tablespoons olive oil extra virgin
  • 2 lemons zest and juice freshly squeezed
  • 4 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground

  • 4 sprigs fresh herbs such as parsley or dill for garnish

Prepare the Trout
  1. Preheat your oven to 400°F (200°C). This ensures the trout cooks evenly and quickly.
  2. Rinse the trout fillets under cold water and pat them dry with paper towels. This step removes any excess moisture, allowing for better browning.
  3. Place the trout fillets skin-side down in a baking dish. Make sure they are arranged in a single layer for even cooking.
Make the Marinade
  1. In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, chopped dill, salt, and black pepper. Stir well to combine. This mixture will infuse the fish with flavor.
  2. Pour the marinade evenly over the trout fillets, making sure to coat them thoroughly. Allow the trout to marinate for about 10 minutes. This step enhances the flavor of the fish.
Bake the Trout
  1. Cover the baking dish with aluminum foil to retain moisture during baking. This prevents the fish from drying out.
  2. Bake in the preheated oven for 15 minutes. The trout is done when it flakes easily with a fork and is opaque throughout.
  3. Remove the foil for the last 5 minutes of baking if you prefer a slightly crispy top.
Serve
