- Preheat your air fryer to 400°F (200°C).
- Pat chicken breasts dry with paper towels, then season both sides with salt and pepper.
- Combine panko breadcrumbs with half of the grated Parmesan in one bowl, and beat the egg in another bowl.
- Dip each chicken breast into the egg wash, then roll it in the breadcrumb mixture, pressing down to adhere.
- Spray both sides of the coated chicken with olive oil and place in the air fryer basket.
- Cook for 10-12 minutes, checking for an internal temperature of 165°F (74°C).
- Spoon marinara sauce over each piece, topping with mozzarella cheese.
- Return the basket to the air fryer for an additional 3 minutes to melt the cheese.
